WHere is a home-style version of a cocktail featured on the seasonal cocktail list. This is a batch pre-mixed that's packed full of essence of a holiday season, which makes it excellent for a festive gathering. Reserve the remaining syrup for breakfast cocktails, desserts, or to make more rounds of bikinis.
Bikini
Serves 10 servings
To make the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Cocktail (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Put all the items inside a pan, bring to a gentle boil, mixing so the sugar melts. Then, take off the burner and leave to cool down completely. Decant to a sealable bottle, cap it and store in the refrigerator, it will last for up to four weeks.
Preparing the Cocktail Base: Pour all the liquids in a large bottle, let it rest for 60 minutes, then filter it best through a fine cloth, to ensure it's perfectly clear.
To serve: Measure 85ml of the premix into your stirring glass packed with ice, gently stirring lightly for about 60 seconds to cool it down. Pour to a cold coupe glass or equivalent, garnish with the cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
